Ingredients
- 4 large russet potatoes
- 2 tablespoons vegetable oil
- 1 (12-14oz) package smoked sausage, cut in ½-inch slices
- 1 green bell pepper, sliced
- 1 red onion, halved and thinly sliced
- 1 (28oz) can Saucy Spoon Spicy Roasted Chipotle Baked Beans
- ½ cup sour cream, regular or light
- 1 tablespoon snipped fresh chives
- ¼ cup shredded cheddar or jalapeño jack cheese, optional
- Freshly grated black pepper
Directions
Wash potatoes and poke each three times with a sharp knife. Microwave potatoes for 12 to 16 minutes or until cooked through.
In large skillet, heat oil and add sausage, green pepper, and onion. Cook for 5 to 7 minutes or until sausage is browned in places and vegetables are crisp tender. In a saucepan or microwave-safe container, heat beans covered for 2 to 3 minutes or until hot.
Split potatoes and top with baked beans and sausage mixture. Top with sour cream, chives and cheese, if using. Season to taste with black pepper.
Vegetarian Option: Omit sausage and add a sliced red bell pepper or thinly sliced zucchini to the other vegetables.
Oven Directions: Preheat oven to 400°F, Wash potatoes and poke each three times with a sharp knife. Bake for 50 to 60 minutes or until tender.
